A Symphony of Flavors: Culinary Delights from the 2023 Houston Symphony Wine Dinner

This year’s Wine Dinner and Collector’s Auction was a smashing success, raising $1.12 million for the Symphony’s Education and Community Engagement initiatives. At the event on April 21, guests were treated to a multi-course gourmet dinner courtesy of City Kitchen and enjoyed exquisite wine parings meticulously selected by John & Lindy Rydman and Lisa Rydman Lindsey of Spec’s Wines, Spirits & Finer Foods. If you couldn’t secure a seat to this year’s sold-out Wine Dinner—or, if you attended and just want to relive the exciting night—you’re in luck! Chef Court Burell at City Kitchen is sharing the recipe for their Goat Cheese and Parmesan Soufflé, the first course from the event’s multi-course menu. Now you can recreate a little piece of the Wine Dinner at home!

Goat Cheese and Parmesan Soufflé

Number of servings: 16

Ingredients:

  • Butter and flour for coating ramekins
  • 4 ounces butter
  • ¾ cup all-purpose flour
  • 4 cups milk
  • 1 cup grated parmesan
  • 1 cup crumbled goat cheese
  • 12 eggs, separated
  • Salt and black pepper
  • 3 cups heavy cream

Instructions:

  1. Butter and flour 4oz ramekins.
  2. In a large saucepan over medium heat, melt butter. Stir in flour, cook about 5 minutes, stirring frequently. Slowly whisk in milk; cook about 10 minutes or until thick, whisking frequently.
  3. Transfer to the bowl of an electric mixer. With the whisk attachment on low speed, mix in the cheese. Cool slightly, and add egg yolks, one at a time on high speed. Season with salt and pepper. Cool completely.
  4. Whisk egg whites to soft peaks and fold into cheese mixture.
  5. Fill ramekins to the top with completed mixture. Bake in a water bath at 300 degrees for 40 minutes or until lightly browned on top.
  6. Cool; unmold onto buttered parchment paper, browned side up.
  7. Enjoy and refrigerate leftovers.

Instructions for Reheating:

  1. For each serving, place 2 tablespoons cream and one souffle, browned side up, in a small sauté pan.
  2. Bring cream to a boil; place pan in a 375-degree oven for 8 minutes, or until souffle has absorbed most of the cream.
  3. Transfer soufflé to a plate.
